Welcome to Prime Cut

In 1981 a small butcher shop opened with the goal of providing quality meats to the residents of Bakersfield. The community was appreciative and grateful for the specialty prepared items they were able to take home and share with their friends and family. Soon, word got out and people would travel for miles for the experience.
A deli was added and through the years has grown from serving a handful of sandwiches, to over two dozen varieties. The “Mervburger” became a huge success and has repeatedly been hailed the “Best Burger” in town by food critic, Pete Tittl. Homestyle BBQ became popular which created an added interest. As a result, there became more of a demand for catering.

Our love for comfort food and the South gave us the desire to open a restaurant for people to gather and enjoy their love for food. Our extensive menu offers a wide variety of dishes to choose from including our kid's menu. We use only quality ingredients in the preparation of all our dishes which we are proud to say are made from scratch. That's right, we freshly grind and hand shape our burgers, cut our own steaks, catch our own fish (just kidding), even bake our own bread. Our unique variety of house seasonings, marinades and sauces keeps our customers coming back for more.

Prime Cut has a fun vibe which makes it easy to relax. It is our hope that you will find our friendly atmosphere a comfortable place to dine, enjoy and celebrate. Don't forget...we still have one of the last Old Fashioned Butcher Shops in town. Our adjoining Butcher Shop will make it easy for you to pick up quality meats and easy to re-heat side dishes along with finding your favorite hot sauce or barbecue accompaniment.
